Hi Aaron, If you are not publishing tf messages you need to make sure the fixed_frame and target_frame in rviz are set to the frame in which you are publishing thes scans. In the case of the 2nd tutorial you linked to it should be "laser_frame" Also in the LaserScan display there is an error field with information if it cannot display anything. This should tell you why rviz cannot update the display. If you're still having trouble please send that message in your reply.
