I plan on doing some demonstrations of ROS using screen captures of rviz
while the navigation stack is operating.  It would be great to have a
"radius" or "line thickness" option for the Path display type to make
the paths easier to see.  If there is already a way to do this, please
forgive my inability to find it...

This doesn't exist at the moment, no.  Feel free to file a feature request.
