With the auto-adjustments enabled the cameras performed poorly outside because bright glare would cause the images to desaturate. With the automatic settings disabled I noticed some flickering in the images, but they otherwise looked consistent. I would not be concerned about the flickering because it was likely caused by a noisy power source and not anything intrinsic to the cameras.

If you decide to use PS3 Eye cameras as a stereo pair, you might want to take a look at the PS3-specific camera driver that I wrote [1]. It only works with the PS3 Eye and is not as well documented as uvc_cam, but it gave me much better synchronization results as of several months ago (however, this may no longer be true). Also, the "Synchronization" section in this report [2] on my website has a few pictures of what a properly synchronized pair of cameras looks like.
